I find myself using shin on shin a lot in both gi and no gi as my go-to open guard. Maybe it's just comfortable for me because of my background. Anyway - I like the way Wiltse teaches it in this video. He has an entire wrestle-up instructional that I also really like. I've found a lot of success in just coming up on single legs rather than accepting and playing the bottom position.
I should probably mention there's most likely some mature language in this video, and all of his videos.

You might also like to look at "koala guard" stuff (usually shown in gi, but deals with when you don't get the shin to shin, but are sitting up). Marcio did a class on all this in like 2011 for us at the old GFV.
Johnny Carlquist, who is an incredible Pedro Sauer OG from Utah, also showed some options including wrestling up, from here at the global conference a few years back, too. I might have video, I'll look.
